Crispy Sweet Potato Fries at Home.

You can get crispy sweet potato fries at home without deep frying. Use the oven or an air fryer and a few simple tricks. Our Orange Kalim aw from Bukidnon turns sweet and crisp with these steps.
What makes fries crispy
Moisture is the enemy of crisp. The goal is dry surfaces, even cut size, light oil, enough heat, and space between pieces. A light dusting of cornstarch also helps a thin crust form.
Cut size for even cooking
Cut fries about 1 centimeter thick. Thinner fries crisp faster but can burn if you forget to flip
Trim the ends so sticks are even. Keep pieces similar in size so they cook at the same pace
Soak and pat dry
Soak cut fries in cold water for 20 to 30 minutes to remove surface starch
Drain and dry very well with clean towels. Wet fries will steam instead of crisp
Light oil and cornstarch dusting
Toss dry fries with one to two teaspoons of cornstarch per large potato
Add one to two tablespoons of oil and season with salt and spices
Toss until every piece is lightly coated
High heat and single layer rules
Use high heat and preheat your tray or basket
Spread fries in a single layer with space between pieces
Flip or shake at the halfway point
Oven sweet potato fries
Heat the oven to 220°C or 425°F. Place an empty tray inside to preheat
Line the counter with a sheet of baking paper and toss cornstarch, oil, and seasonings there to keep things tidy
Carefully spread fries on the hot tray. Do not crowd
Bake 15 to 20 minutes, flip and rotate the tray, then bake 10 to 15 minutes more until edges are browned and centers are tender
Rest 2 minutes on the tray to set the crust, then serve
Seasoning ideas: salt and smoked paprika, garlic powder and rosemary, or a small drizzle of honey and a pinch of chili flakes right before serving.
Air fryer sweet potato fries
Heat the air fryer to 200°C or 400°F
Add fries in a single layer. Work in batches if needed
Cook 10 to 12 minutes, shaking once at halfway. Add a minute or two if you want extra crisp
Keep the first batch on a rack while you finish the rest so steam does not soften them
Three quick dipping sauces
Yogurt garlicMix plain Greek yogurt, minced garlic, lemon juice, olive oil, salt, and a splash of water to thin.
Honey mustardStir mayonnaise, Dijon mustard, honey, and a little lemon juice or apple cider vinegar. Pinch of salt to taste.
Spicy mayoMix mayonnaise with sriracha, lemon or lime juice, and a little minced garlic.
Make ahead, store, and reheat
Fries are best hot from the oven or air fryer
For leftovers, cool completely, then refrigerate up to three to four days in a sealed container
Reheat in an air fryer for 3 to 5 minutes or in a hot oven for 6 to 8 minutes. Microwaves soften the crust so use only for quick reheats
