Roasting sweet potatoes is an easy way to cook once and enjoy all week. The high heat brings out natural sweetness and gives you a tender center with caramelized edges. Our Orange Kalim aw from Bukidnon is perfect for this method.

Why roast sweet potato for meal prep

What you need

  • Sweet potatoes with similar size

  • Neutral oil or olive oil

  • Salt and your favorite seasonings

  • One or two large baking trays

How to roast a big batch

  1. Heat the oven to 220°C.

  2. Wash, scrub, and dry well. Keep the skin if you like the texture.

  3. Cut into 2 to 3 centimeter cubes or wedges.

  4. Toss with 1 to 2 tablespoons oil and a good pinch of salt.

  5. Spread in a single layer with space between pieces so they brown.

  6. Roast 30 to 45 minutes depending on cut size and how crowded the tray is. Turn once at halfway.

  7. They are done when edges are browned and a fork slides in easily.

Whole sweet potatoes roast well too. Prick the skin and bake at 220°C for about 45 to 60 minutes until soft.

Cool and store safely

  • Let trays cool until steam fades, then transfer to shallow containers

  • Refrigerate within two hours of cooking

  • Keep cooked sweet potatoes three to four days in the fridge

  • For longer storage, freeze after cooking in meal size packs

Reheat fast

  • Air fryer: 2 to 4 minutes to bring back the crisp on cubes and wedges

  • Oven or toaster oven: 200°C for 8 to 10 minutes

  • Microwave: 1 to 2 minutes for quick bowls

  • Whole roasted sweet potatoes reheat well in the microwave
