This delicious and hearty grilled cheese sandwich is filled with mashed sweet potatoes, caramelized onions, and melted cheese. Ingredients:
2 medium sweet potatoes, peeled and diced
1 tablespoon olive oil
1 medium onion, thinly sliced
Salt and pepper, to taste
4 slices bread
2 tablespoons butter, softened
4 slices cheese (such as cheddar or Monterey Jack)
Instructions:
In a medium pot, bring a few inches of water to a boil. Add the sweet potatoes and cook until they are tender about 15-20 minutes. Drain the sweet potatoes and mash them with a fork.
In a large skillet, heat the olive oil over medium heat. Add the onion and cook until it is caramelized about 10-15 minutes. Season with salt and pepper to taste.
Spread the butter on one side of each slice of bread.
On the unbuttered side of two slices of bread, spread a layer of mashed sweet potatoes and caramelized onions. Top with a slice of cheese.
Place the remaining two slices of bread on top of the cheese, buttered side up.
Place the sandwiches in the skillet and cook for 2-3 minutes on each side, until the bread is golden brown and the cheese is melted.
Serve the sandwiches hot, cut in half if desired.
