Orange Sweet Potato and Chipotle Chili.



This hearty and flavorful chili is made with diced sweet potatoes, black beans, and a smoky chipotle sauce. Ingredients:

  • 2 tablespoons olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 pound ground beef

  • 2 teaspoons ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon paprika

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • Salt and pepper, to taste

  • 1 can (14.5 ounces) diced tomatoes

  • 1 can (15 ounces) of black beans, drained and rinsed

  • 1 medium sweet potato, peeled and diced

  • 1 chipotle pepper in adobo sauce, minced

  • 1 cup beef broth

  • Chopped fresh cilantro, for serving

  • Shredded cheese, for serving

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until they are tender about 5-7 minutes.

  2. Add the ground beef to the pot and cook until it is browned, breaking it up into small pieces as it cooks.

  3. Stir in the cumin, chili powder, paprika, garlic powder, and onion powder. Season with salt and pepper to taste.

  4. Add the diced tomatoes, black beans, sweet potato, chipotle pepper, and beef broth to the pot. Stir to combine and bring the mixture to a boil.

  5. Reduce the heat to low and simmer the chili for 20-30 minutes until the sweet potatoes are tender.

  6. Serve the chili hot, garnished with chopped cilantro and shredded cheese if desired.
