  • Salt and pepper, to taste

  • 1 large sweet potato, peeled and diced

  • 1 can (14.5 ounces) diced tomatoes

  • 1 can (15 ounces) chickpeas, drained and rinsed

  • 1 cup orange juice

  • 1 tablespoon orange zest

  • Chopped fresh cilantro, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until they are tender about 5-7 minutes.

  2. Stir in the cumin, coriander, cinnamon, paprika, turmeric, and cayenne pepper (if using). Cook for 1-2 minutes, until the spices are fragrant.

  3. Add the sweet potato, tomatoes, and chickpeas to the pot. Pour in the orange juice and add the orange zest. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-30 minutes, until the sweet potatoes are tender.

  4. Season the stew with salt and pepper to taste. Garnish with chopped cilantro and serve hot.
