Orange sweet potato and pork chops: a tasty and easy weeknight meal.

This recipe is a perfect option for a busy weeknight meal. The orange adds a burst of citrusy flavor to the sweet potatoes, while the thyme or rosemary gives the pork chops an herby aroma. The meal is filling and packed with nutrients, making it a healthy and satisfying choice. Enjoy!


  • 4 pork chops

  • 1 large orange

  • 2 medium sweet potatoes

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • Chopped fresh thyme or rosemary (optional)


  1. Preheat the oven to 375°F (190°C).

  2. Peel and chop the sweet potatoes into 1-inch cubes. Place them on a baking sheet, drizzle with olive oil, and season with salt and pepper.

  3. Peel the orange and cut it into small chunks. Spread the orange chunks on top of the sweet potatoes.

  4. Season the pork chops with salt, pepper, and fresh thyme or rosemary (if using). Place the pork chops on top of the orange and sweet potatoes.

  5. Bake for 25-30 minutes, or until the pork chops are cooked through and the sweet potatoes are tender.

  6. Serve the pork chops, sweet potatoes, and oranges together.
