This orange sweet potato and leek tart is a fancy and delicious appetizer or main dish that's sure to impress your guests. Ingredients:

  • 1 refrigerated pie crust

  • 1 tablespoon olive oil

  • 1 medium sweet potato, peeled and sliced into thin rounds

  • 1 medium leek, white and pale green parts only, thinly sliced

  • 2 cloves garlic, minced

  • 1/4 cup orange juice

  • 1/4 cup grated Parmesan cheese

  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. On a lightly floured surface, roll out the pie crust into a large circle. Transfer the crust to a 9-inch tart pan with a removable bottom. Press the crust into the pan, trimming any excess.

  3. In a large skillet, heat the olive oil over medium heat. Add the sweet potato slices and cook for 3-4 minutes, until they are tender.

  4. Add the leeks and garlic to the skillet and cook for an additional 3-4 minutes, until the leeks are tender.

  5. Stir in the orange juice and cook for 1-2 minutes, until the liquid has evaporated.

  6. Spread the sweet potato mixture over the pie crust in the tart pan. Sprinkle the Parmesan cheese over the top.

  7. Bake the tart for 20-25 minutes, until the crust is golden brown and the filling is heated through.

  8. Serve the tart hot, garnished with additional Parmesan cheese if desired.
